Candied Bacon Topping

Ingredients

  • 10 to 12 slices of thick cut bacon
  • 1/3 cup dark brown sugar
  • 1 tbsp. thyme
  • 1 tbsp. rosemary
  • 1 tsp. red chili pepper flakes
  • 2 to 3 tbsp Dijon mustard

 

Method:

  1. Preheat the oven to 350 F.
  2. Line a baking sheet with parchment paper. Arrange the bacon slices onto the paper.
  3. In a small bowl combine the brown sugar, thyme, rosemary, and red chili pepper flakes and set aside.
  4. Bake the bacon for 8 minutes, take it out of the oven, and apply a thin coat of Dijon mustard with a brush onto each slice of bacon.
  5. Sprinkle the brown sugar mixture evenly over the mustard brushed bacon slices.
  6. Place back in the oven and cook for additional 8 minutes. Take out of the oven and let cool off (beware of the high temperature of caramelized sugar).
